Purchase a giant orange cauliflower from Wegman's.
Slice the cauliflower lengthwise into 1/2 inch thick slices, including the corn and leaves.
Chop off the bottom of the stem and remove excess bits of stem as needed.
Preheat the oven to 450°F (232°C).
Smash 6 cloves of garlic (or use a whole head) by pressing down with a knife and peeling away the skin.
Use a mallet to smash garlic if preferred for ease.
Spray the roasting pan with olive oil spray before adding the cauliflower slices and garlic.
Spread the cauliflower and garlic into a nice even layer in the roasting pan.
Sprinkle spices over the cauliflower, including turmeric, red pepper flakes, salt, and black pepper, to taste.
Roast the cauliflower without disturbing for 25-30 minutes until golden brown and crisped up in spots.
After 10 minutes, check the cauliflower; it should smell divine.
Gather chives from the garden to replace parsley, as it's not available.
After 25 minutes, flip over larger cauliflower steaks and stir smaller pieces with a spatula.
Return the pan to the oven for an additional 8-10 minutes until evenly brown.
Remove the cauliflower from the oven and sprinkle with feta cheese, checking if it's vegetarian-friendly.
Scissor the chives over the cauliflower.
Squeeze fresh lemon juice over the dish to finish.
Drizzle with fancy olive oil before serving.
