Blend 597 grams of fresh corn until some texture remains.
Add 4 tablespoons of milk, 2 tablespoons of sugar, 1 teaspoon of kosher salt, and 1 large egg to the blender and blend again.
Grate 300 grams of mozzarella cheese and set aside.
In a bowl, combine the blended corn with 1 cup of masa and mix well with hands until the texture feels moist but solid.
Form the masa into balls and flatten them to form arepas, using parchment paper to help shape them.
Heat a cast iron pan with a little oil over medium heat.
Cook the arepas for around 4 to 5 minutes on each side until browned and puffed up.
For toppings, caramelize a large onion in a pan with 1 teaspoon of oil and 1 tablespoon of butter over medium-low heat.
Prepare thinly sliced pre-cooked pork sausage in the same pan until lightly browned.
Assemble the arepas with caramelized onions, mashed avocado, sliced sausage, and a drizzle of sriracha sauce.
