How to make elderberry red wine vinegar | Recipe

Show a batch already done and one waiting to be filtered and boiled with sugar added.

Boil elderberries for 10 minutes to remove toxic compounds.

In the jar, combine 800 g of elderberries with 1 liter of vinegar.

Squash the berries; some may be left whole.

Cover the jar to prevent fruit flies, steep for 4 days.

Prepare bowls, a sieve, and a jelly bag for straining.

Use cheesecloth in the sieve over the bowl to strain the mixture.

Pour the mixture into the sieve in small batches to avoid spills.

Squeeze the jelly bag to extract all juice from the berries.

Rinse the cheesecloth to filter again into the pan.

Prepare sterilized bottles for the strained liquid.

Bring the strained liquid to a boil, watching for bubbles.

Add 100 g of sugar gradually while stirring to dissolve.

Boil for 10 minutes, stirring occasionally to prevent overflow.

Observe the mixture reducing and darkening during boiling.
