Heat a saucepan over medium heat and add 1 tsp of olive oil.
Add chopped potatoes, chopped onion, and diced red bell pepper to the saucepan and sauté on high heat for about 4 minutes.
Add a stock cube and stir to incorporate.
Add tuna (or protein of choice) and cook for an additional minute, then set aside.
In the same saucepan, add 2 tablespoons of oil and chopped potatoes, then sprinkle with salt.
Add chopped onion and 1 tsp of turmeric (optional) and cook until the potatoes are tender, mashing them into a consistency similar to mashed potatoes.
Set the mashed potato mixture aside.
In a bowl, crack 6 eggs and add chopped fresh parsley, salt, and black pepper, then mix well.
Add the cooked potato mixture to the egg mixture and stir until combined.
Heat a deep frying pan over low heat and add 2 tablespoons of oil.
Divide the potato-egg mixture into two parts and pour one part into the frying pan, spreading it evenly.
Add cheese on top (amount to taste) and cover with the remaining potato-egg mixture, ensuring it's spread evenly.
Cook on low heat for about 6 minutes, shaking the pan to check if it moves, indicating it's ready to flip.
Cover with a plate and carefully turn it over, then return it to the pan to cook the other side for about 5 minutes.
Check for doneness by shaking the pan; if it moves freely, it's done.
Transfer the omelet to a plate and cut into portions.
