Cut 1.5 pounds of chicken into thin strips using a knife on a cutting board.

Place the chicken strips onto a baking sheet.

Cut bell peppers into thin strands.

Cube tomatoes finely.

Cut carrots into thin strips.

Cut onion into thin strips.

Quarter the mushrooms by cutting them in half and then cutting those halves in half again.

Mix all the cut vegetables together with the chicken on the baking sheet.

Drizzle olive oil over the chicken and vegetables and mix well.

Add salt, garlic powder, paprika, black pepper, chili powder, and cumin to the mixture, reserving some seasoning for later.

Mix the seasoning into the chicken and vegetables.

Bake in the oven until partially cooked, then add the reserved tomatoes and remaining seasoning.

Return to the oven to finish baking.
