Warm 260 grams of milk in the microwave for about 50 seconds until it reaches 105 to 110 degrees Fahrenheit.
Add 6 grams of yeast and 8 grams of diastatic malt powder to the warm milk; stir to combine and let it stand for 3-5 minutes until foamy.
In a large mixing bowl, combine 400 grams of flour, 10 grams of honey, 20 grams of olive oil, and 8 grams of salt.
Pour the yeast mixture into the flour mixture and mix vigorously with your hands until no dry flour remains, about 2-3 minutes.
Cover the bowl with plastic wrap and let the dough rest for 15 minutes to hydrate the flour.
Turn the dough out onto a clean counter and knead for 8-10 minutes until smooth and no longer sticky.
Perform a gluten window test by stretching a piece of dough thinly; if it tears before becoming translucent, continue kneading for a couple more minutes.
Place the dough back in the mixing bowl, cover with plastic wrap, and let it rise until doubled in size, about 45 to 60 minutes.
Punch down the risen dough and divide it into equal portions for rolls.
Shape each portion into long, oval rolls, about 6-8 inches in length.
Place the rolls on a baking sheet lined with cornmeal; cover and let rise for another 30-45 minutes.
Preheat the oven to 375°F (190°C).
Brush the tops of the rolls with egg whites and sprinkle with sesame seeds.
Bake in the preheated oven for 20-25 minutes until golden brown and hollow-sounding when tapped.
Remove from the oven and let cool on a wire rack before slicing.
