This method gives pretzel bread its characteristic dark brown crust and distinctive taste. Today, pretzel bread has gained popularity worldwide, often served in various forms, from rolls to loaves, and is a favorite at festivals and gatherings.

Combine 350 milliliters warm water, 7 grams dried yeast, and 3 tablespoons brown sugar; stir until well combined and let rest for about 3 minutes.
Add 2 tablespoons melted butter to the yeast mixture.
Add 200 grams of all-purpose flour and stir until incorporated.
Add another 200 grams of flour and continue stirring.
Season with 1 teaspoon of salt and add the remaining flour in two steps of 50 grams each.
Knead the dough until it has an elastic texture; add more flour if the dough is too sticky.
Place the dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
Prepare the boiling solution by combining 1.75 liters water with 150 grams baking soda.
Boil the bread for 30 seconds on each side; remove using a slotted spoon and place on a baking sheet.
Cut a small incision on the top of the bread to allow expansion and sprinkle with coarse sea salt to taste.
Cook the bread at 220 degrees Celsius for 3 minutes, then reduce the temperature to 190 degrees Celsius for 30 minutes.
Grease the bread with melted butter before serving.
