1

In a large bowl, combine 490 g of Kim's multi-grain bread flour blend, 1 teaspoon of salt, and 1 teaspoon of baking powder, mixing with a large spoon.

2

Add 2 tablespoons (28 g) of cold BU butter to the flour mixture and break it up with fingers until it resembles breadcrumb consistency.

3

Pour in 600 mL of buttermilk and mix with hands until combined; the dough will be very wet.

4

Transfer the dough onto a piece of parchment paper and flatten it into a round shape about 8 inches in diameter and 2 inches thick.

5

Cut a deep cross into the center of the dough, known as blessing the bread.

6

Brush the top of the dough with leftover buttermilk and sprinkle with a handful of gluten-free oats if desired.

7

Place the skillet in a preheated oven at 425°F (220°C) for 15 minutes, then reduce the temperature to 400°F (204°C) and continue baking for 25 to 30 minutes until crusty and sounds hollow when tapped on the bottom.

8

Cut into the bread while still warm, noting that it may compress the bread.
