Pre-cook bacon on the Blackstone griddle to your desired chewiness.
Chop the pre-cooked bacon and set aside.
Prepare some chives and green onions, using the ends as a garnish.
Crack 3 eggs into a bowl and add a splash of heavy whipping cream, salt, and pepper to taste.
Heat the Blackstone griddle to around 300-350 degrees Fahrenheit, adjusting the burners as necessary to avoid burning the butter and eggs.
Add butter to the griddle and let it melt, ensuring the temperature is not too high.
Pour the egg mixture onto the griddle, using a spatula to spread it out slightly longer than the spatula itself.
Add chopped bacon, green onions, and a mix of cheddar and Kobe Jack cheese on one side of the omelet.
Fold the omelet over the fillings, using the spatula to assist in flipping it if necessary.
Cook until the omelet is browned to your liking, then serve with additional bacon on top for garnish.
