Heat a stock pot over medium heat and add 2 tablespoons of extra virgin olive oil.

Add all the chopped vegetables except for the potato and sauté for about 4 minutes until onions are translucent.

Add the pieces of potato and the drained chickpeas; season with sea salt and black pepper and mix gently.

Add 1 liter of vegetable broth and one sprig of fresh thyme; raise heat to high and bring to a boil.

Once boiling, cover with a lid and lower heat to low medium; simmer for 15-20 minutes.

Cut broccoli florets into bite-sized pieces and rinse under cold water.

After 15-20 minutes, add the broccoli florets to the soup and mix gently; cover and simmer for another 3-4 minutes until broccoli is tender but crisp.

Remove from heat and transfer some soup into a shallow bowl; squeeze fresh lemon juice over the soup and garnish with hard-boiled eggs.
