Remove the skin from the onion and cut it into quarters.
Break off the stems of the jalapenos and crush the garlic, cutting the pieces in half.
Heat a cast iron skillet over medium-high heat and add about 0.5 teaspoon of olive oil to coat the pan.
Add the jalapenos, chopped onion, garlic, and optional serrano pepper to the skillet.
Shake the pan frequently and stir to coat everything evenly with oil.
After 4-5 minutes, look for browning or blackening on the skin of the jalapenos and smell the aroma of the ingredients.
Remove the ingredients from the heat once they are nicely browned.
Chop all the cooked ingredients roughly, as they will go into the blender.
Bring 1 cup of water to a boil in a medium or large pot and add the chopped peppers and onion.
Reduce the heat to a simmer for about 5 minutes to soften the ingredients.
Add the garlic, cumin, salt, and optional sugar to the pot and mix well before removing from heat.
Let the mixture cool slightly before blending to avoid heating the vinegar too much.
Roughly chop the cilantro and add it to the blender along with the cooled mixture and 2/3 cup of white vinegar.
Blend the mixture starting on low until smooth, adjusting consistency with water if needed.
Taste the sauce to check flavor and adjust if necessary.
Bottle the hot sauce in a suitable container and allow it to cool on the countertop for 1-2 hours before refrigerating.
