Add warm water to a bowl and mix in dry yeast with a pinch of sugar, let sit for 10-15 minutes.
In a separate bowl, mix whole wheat flour, soft flour, strong flour, and salt together.
After the yeast has risen, slowly add it to the dry ingredients.
Mix until a cohesive dough forms, then knead by hand until firm.
Place the dough in a bowl, cover with a cloth, and let rise for 1 hour in a warm place.
Divide the dough into 8 small balls and let them rise for another hour, covered with a kitchen towel.
Roll each ball into a thin round flatbread, about 3-4 mm thick.
Heat a pan and place the flatbread on it, cooking for 15-20 seconds on each side until puffed.
