Pull rhubarb from the garden and freeze it if necessary.

Measure out 2 cups of frozen rhubarb and 2 cups of fresh strawberries, topping and quartering the strawberries.

In a bowl, combine the rhubarb, strawberries, sugar, salt, and a splash of orange extract, tossing to mix.

Transfer the mixture to the stove and cook over medium-high heat.

Simmer for about 10 minutes until the rhubarb and strawberries are soft, stirring occasionally.

If the mixture thickens too much, it can be adjusted later; aim for some texture.

After simmering, add a knob of butter to help reduce foam and improve consistency as it cools.

Allow the sauce to cool before serving it over ice cream or other dishes.
