Add 1.5 cups of regular allulose to the simmering water and mix until it becomes a clear liquid.

Add 1 teaspoon of lemon juice to the mixture to prevent recrystallization.

Add 1/4 teaspoon of cream of tartar to the mixture for the same purpose.

Simmer the mixture for 20 minutes, setting a timer to keep track.

After 20 minutes, pour the mixture into a mason jar.

Let the keto corn syrup cool and observe its consistency after sitting out overnight.
