In a bowl, combine 3 cups of all-purpose flour and 1 cup of cornstarch.
Add 2 teaspoons of baking powder, 1 tablespoon of paprika, 1.5 teaspoons of salt, 1.5 tablespoons of garlic powder, 1.5 tablespoons of onion powder, 0.5 teaspoon of cayenne pepper, and 1 tablespoon of freshly cracked black pepper to the flour mixture and mix well.
Preheat the stove to 350 degrees Fahrenheit for frying the chicken.
Take chicken breasts that have been marinating in buttermilk overnight.
Mix the dry ingredients thoroughly in the bowl.
Prepare the waffle mix according to the package instructions, using 2 cups of mix, 2 eggs (separated), 4 tablespoons of unsalted butter, and 1.5 cups of milk.
Beat the egg whites until foamy and fluffy, then add the yolks, butter, and milk to the mixture and stir gently to combine without overmixing.
Check the oil temperature; it should be around 350 degrees Fahrenheit before frying.
Double dip the marinated chicken breasts: first in the flour mixture, then back into the buttermilk, and finally back into the flour mixture for an even coating.
Carefully place the chicken into the hot oil, laying it away from you to avoid splatter.
Cover the skillet with a lid, leaving it slightly cracked, and fry the chicken for about 10 minutes before flipping.
Check the chicken for a golden-brown color before flipping it over to cook the other side.
While the chicken is frying, prepare the waffle batter by combining the wet and dry ingredients, ensuring not to overmix.
Spray the waffle iron with nonstick spray or butter before pouring in the batter.
Cook the waffles until they are golden brown and crispy on the outside, then place them on a baking tray to keep warm.
Once the chicken is cooked through (internal temperature of 145 degrees Fahrenheit), remove it from the oil and place it on a wire rack to drain excess oil.
