Spray the brisket with warm water to loosen the fat.
Apply Goldie rub generously on the brisket, ensuring to cover all sides and edges.
Let the seasoned brisket sit for 15-20 minutes while the smoker heats up.
Preheat the smoker to 225°F (107°C).
Place the brisket in the smoker, fat side up, on a higher shelf to allow heat to cool down as it travels.
Smoke the brisket until it reaches about 200°F (93°C).
Once the brisket reaches around 200°F, wrap it in foil with some smoked tallow poured on top and bottom to keep it moist.
Let the wrapped brisket rest until it cools down to 165°F (74°C).
Slice the brisket against the grain and serve.
