Today, they are a popular brunch item in many Mexican restaurants, often customized with various toppings like eggs, cheese, and avocado, making them a versatile and hearty meal.

Cut tortillas into small triangles by cutting in half, then in half again, and then into smaller pieces.
Heat oil in a frying pan on medium heat and fry the tortilla triangles until golden.
Remove the tortilla chips from the oil and drain excess oil.
Roast tomatoes, jalapenos, garlic, and chile de arbol.
Transfer roasted ingredients to a blender, add cumin, black pepper, and salt, and blend until smooth.
In a small frying pan, heat 2 tablespoons of the oil used for frying tortillas.
Add sliced onions to the hot oil and fry for a couple of minutes.
Add the blended salsa to the pan, along with 1/4 cup of water, and simmer for 2 minutes.
Add the tortilla chips to the salsa and mix carefully to coat without making them soggy.
Top the mixture with cubed cheese and cover to melt the cheese.
Serve with beans, fried eggs, crema, queso fresco, and avocado.
