Add 1 cup of lukewarm water to the mixing bowl.
Add 3 tablespoons of melted butter to the water.
Add 2 tablespoons of honey (or sugar) to the mixture.
Add 1 1/2 teaspoons of active dry yeast to the bowl.
Add 3 cups of bread flour (or all-purpose flour) to the mixture.
Add 2 tablespoons of dry milk powder (optional) to the bowl.
Add 1 1/2 teaspoons of salt to the mixture, pouring it away from the bowl.
Use a KitchenAid mixer with a dough hook to knead the dough on speed two for 6 to 8 minutes.
Check the dough for consistency; add more water if too dry or more flour if too wet.
After kneading for 8 minutes, check the dough for elasticity and smoothness.
Cover the dough with a warm, wet tea towel and let it rise for 45 minutes to an hour until expanded.
Punch down the dough and turn it out onto a floured surface.
Press the dough out to the width of the loaf pan.
Grease the cast iron loaf pan with 1/2 to 1 tablespoon of oil.
Shape the dough into a loaf and place it in the greased pan.
