Preheat the grill until very hot.
Place the eggplants on the grill and cook for 15 to 20 minutes until cooked through and lightly charred.
While the eggplants are cooking, prepare the sauce by washing the parsley and squeezing out excess water.
Chop the parsley and garlic into small pieces.
Place garlic in a mortar, add salt, and pound until smooth.
Add sesame seeds and grind them slightly.
Mix in olive oil, lemon juice, parsley, and black pepper until combined.
Once the eggplants are done, transfer them to a cutting board, trim the stem end, and cut them in half lengthwise.
Scoop out the pulp and place it in a bowl, mixing in the garlic sauce.
Serve the mixture in a bowl surrounded by crackers, pita bread, or cucumber sticks.
