Start by browning 4 slices of bacon in a large pot with 1 tablespoon of peanut oil.
Cut the stem off the savoy cabbage and slice it into smaller pieces, about half an inch thick.
Measure out approximately 1 pound of cabbage, which should yield about 10 cups when chopped.
Chop 1.5 cups of onion and prepare 1 tablespoon of coarsely chopped garlic.
After the bacon has browned for 3-4 minutes, add the chopped onion and garlic to the pot and cook for another couple of minutes.
Add the sliced cabbage to the pot.
Pour in 1/4 cup of apple cider vinegar, 1 tablespoon of brown sugar, 1 teaspoon of salt, and 1/4 teaspoon of pepper flakes.
Add 1/2 cup of water to the pot to start the moisture.
Cover the pot and let it cook for 40-45 minutes until the cabbage is tender.
Taste the cabbage and adjust seasoning with more salt or pepper flakes if necessary.
Optionally garnish with chives before serving.
