1 white onion
6 to 8 cloves garlic

1/2 tablespoon chili flakes
1 tablespoon paprika powder
1/2 teaspoon sumac (optional)

8 large flour tortillas
3/4 cup yogurt
3 tablespoons lemon juice
1 tablespoon pepper powder
1/2 teaspoon garlic powder
cilantro (for garnish)

In a food processor, add one white onion, six to eight cloves of garlic, one red pepper, and a bunch of cilantro or parsley leaves. Process a few times and drain excess water.

In a bowl, add minced beef and the processed onion and pepper mix.

Add 1 tablespoon of tomato paste, 1 teaspoon of pepper powder, 1/2 teaspoon of turmeric powder, 1 teaspoon of cumin powder, 1 teaspoon of coriander powder, 1/2 tablespoon of chili flakes, 1 tablespoon of paprika powder, 1/2 teaspoon of sumac (optional), and salt to taste. Mix well with your hands until combined. Refrigerate for some time.

Cut the edges off the eight large flour tortillas for even skewers.

Spread a thin, even layer of spiced meat onto the first tortilla. Place another tortilla on top and repeat the process until all tortillas are stacked.

Freeze the stacked tortillas for 1 hour to make cutting easier, then cut into strips.

For the white sauce, combine 3/4 cup yogurt, 3 tablespoons lemon juice, 1 tablespoon pepper powder, 1/2 teaspoon garlic powder, and salt to taste. Whisk well and set aside for assembling.

Gently press the stack of tortillas and meat together, then slice into thick vertical strips.

Place the strips facing up and carefully thread each strip onto a skewer vertically.

Cut alongside the skewers for easier handling.

Bake in a preheated oven at 425°F for 30 to 35 minutes, flipping once every 10 minutes.

Once ready, remove from the oven and top with your favorite sauce. Garnish with chopped cilantro, sliced onions, and cucumber.
