1 tsp of chilli flakes
½ a chorizo sausage ring, sliced into discs
1 vegetable/chicken stock cube
½ pint of hot water
any vegetables of your choice (peas, sweet corn, spinach)

Start by frying the onion for a couple of minutes until it begins to soften.

Add the chorizo and fry for a couple of minutes until the lovely golden juice is colouring the pan.

Add the peppers and chilli flakes and stir fry for a couple of minutes.

Make up a little stock by pouring ½ pint of hot water over the stock cube.

Add the tinned tomatoes and the stock and bring to the boil.

After a couple of minutes, reduce and allow to simmer for 10 minutes.

Serve with crusty bread and enjoy.
