½ cup boiling water (120 ml)
⅓ cup chia seeds (50 g)
⅓ cup pumpkin seeds (45 g)
⅓ cup sesame seeds (45 g)

3 Tbsp water (35 ml)
1 Tbsp apple cider vinegar (15 ml)
½ cup flaxseed flour (65 g)
1 heaping Tbsp psyllium husk (10 g)
1 tsp baking powder (5 g)
small pinch of xanthan gum

sesame seeds (for topping)

Add ½ cup flax seeds and ½ cup boiling water to a bowl. Stir and let sit for 5 minutes to thicken.

Add ⅓ cup chia seeds, ⅓ cup pumpkin seeds, and ⅓ cup sesame seeds to the bowl. Stir thoroughly.

Add a pinch of salt and a pinch of oregano (or any spices you love) and mix.

Lightly oil a baking tray. Line with parchment paper, then lightly oil the parchment too.

Spread the seed mixture thin and even on the baking tray with a silicone spatula.

Bake for 30 minutes at 180°C (356°F).

Cool the baked mixture, then break into crackers and enjoy with any spread you love.
