Ingredients

  • 200g udon noodles
  • 4 cups dashi broth
  • 1 tbsp soy sauce
  • 1 tbsp mirin
  • 1/2 cup sliced green onions
  • 1/2 cup sliced shiitake mushrooms
  • 1/2 cup bok choy
  • 1 tsp sesame oil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 soft-boiled egg (optional)

Instructions

  1. 1Bring a large pot of water to a boil and cook the udon noodles according to package instructions. Drain and set aside.
  2. 2In a separate pot, heat the dashi broth over medium heat.
  3. 3Add soy sauce, mirin, salt, and pepper to the broth, stirring to combine.
  4. 4Add the sliced shiitake mushrooms and bok choy to the broth and simmer for about 5 minutes until the vegetables are tender.
  5. 5In a serving bowl, place a portion of the cooked udon noodles.
  6. 6Ladle the hot broth and vegetables over the noodles.
  7. 7Drizzle sesame oil on top for added flavor.
  8. 8If desired, add a soft-boiled egg on top of the soup.
  9. 9Garnish with sliced green onions before serving.

Instructions

  3. 3Add the sliced beef to the pot and cook until browned.
  4. 4Pour in the dashi broth, soy sauce, mirin, and sake. Bring to a simmer.
  5. 5Add the cooked udon noodles to the pot and stir to combine.
  6. 6In a separate bowl, beat the eggs and then pour them into the pot, stirring gently to create ribbons of egg.
  7. 7Allow the mixture to simmer for another 2-3 minutes until the eggs are cooked through.
  8. 8Season with salt to taste and remove from heat.
  9. 9Serve hot, garnished with chopped green onions.
