Spring Frittata

8 large eggs
1/4 cup milk
1 cup fresh spinach, chopped
1/2 cup cherry tomatoes, halved
1/2 cup bell pepper, diced
1/4 cup onion, diced
1/2 cup feta cheese, crumbled
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil

Preheat the oven to 375°F (190°C).

In a large bowl, whisk together the eggs and milk until well combined.

Add the chopped spinach, cherry tomatoes, bell pepper, onion, feta cheese, salt, and black pepper to the egg mixture. Stir until evenly mixed.

In an oven-safe skillet, heat the olive oil over medium heat.

Pour the egg mixture into the skillet and cook for about 5 minutes, or until the edges start to set.

Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set in the center and lightly golden on top.
