1

Get a pan really hot.

2

Season Siro steaks with salt and pepper.

3

Add a couple tablespoons of olive oil to the hot pan.

4

Lay the steak in the pan away from you to avoid splatter.

5

Shake the pan to prevent the steak from sticking.

6

Cook the steak until it gets a nice color and doesn't stick.

7

Prepare a quick marinade with 2 tbsp of miso paste, 1 tbsp of sugar, a couple tablespoons of rice wine, and a couple tablespoons of olive oil. Season with salt and pepper.

8

Turn the steaks and baste them with the rendered fat.

9

Remove excess fat from the steak with a knife before placing it into the marinade.

10

Slice Chinese cabbage into quarters and shred it.

11

Season the cabbage with chili flakes, rice wine vinegar, and a small drop of toasted sesame oil. Mix well.

12

Mix Wasabi paste with a couple tablespoons of mayonnaise to create a spicy mayo.

13

Toast corn tortillas on a gas ring or in a frying pan until colored.

14

Shape the tortillas using a rolling pin after toasting.

15

Squeeze out excess marinade from the cabbage and layer it into the taco shell with Wasabi mayo and sliced steak.

16

Prepare a spicy Mexican soup by finely chopping red onions and frying them with chipotle, cumin, and oregano in oil until fragrant.

17

Add garlic and continue to fry until aromatic.

18

Caramelize sugar with the chipotle and onions.

19

Stir in a tablespoon of tomato puree and a can of chopped tomatoes.

20

Add kidney beans and vegetable or chicken stock to cover the mixture.

21

Cook the soup for 15 minutes to allow flavors to develop.

22

Make crunchy tortilla chips by rubbing olive oil onto six large wheat wraps, sprinkling with smoked paprika, cutting into triangles, and baking for 3-4 minutes at 180°C until golden brown.

23

Prepare a fresh tomato salsa by finely dicing three ripe tomatoes, one or two deseeded jalapeños, and half a red onion. Add chopped fresh coriander, juice from two limes, salt, pepper, and a drizzle of extra virgin olive oil.

24

Finish the soup with avocado, sour cream, and cheese for creaminess.
