1/4 cup brown sugar
1.5 teaspoons kosher salt
2 cups rice
3-4 cups water

Turn on the stove to medium-high heat.

Open the can of coconut milk and pour it into a heavy pot or Dutch oven.

Stir the coconut milk continuously to cook down the solids from the fat and liquid, until it starts to bubble and brown.

Once the coconut milk has reduced and is browning, add the rice and stir vigorously for 2-5 minutes until the rice looks translucent.

Add the salt, brown sugar, and raisins to the rice and mix well.

Pour in enough water to cover the rice, approximately 3-4 cups depending on your pot.

Bring the mixture to a simmer and cover the pot.

Let it simmer for 15 minutes on low heat.

After 15 minutes, turn off the heat and let it rest for another 10 minutes, covered.
