Heat a large pot on the stove over medium high heat.

Pour in 1 tablespoon of olive oil.

Add in 1 diced onion, 3 sliced carrots, and 3 sliced celery ribs, and sauté until the onions start to turn soft and translucent.

Add in 3 cloves of minced garlic and stir for about 1 minute until fragrant.

Lay 3 boneless skinless chicken breasts on top of the vegetables and season with salt and pepper.

Add 8 cups of chicken broth to cover the vegetables and chicken.

In the meantime, whisk together 2 cups of all purpose flour, 3 teaspoons of baking powder, and 1 teaspoon of salt.

Pour in 1 cup of buttermilk and 2 tablespoons of melted butter, then stir to form a thick clumpy dough.

Remove the chicken breasts and chop or shred into small bite-sized pieces.
