Nutritional yeast is a dairy-free alternative with a cheesy flavor.
Boil the potatoes in salted water for about 6 minutes until parboiled.
Grate the parboiled potatoes using a box grater.
Transfer the grated potatoes to a mixing bowl.
Add about 1 teaspoon of garlic powder to the bowl.
Season generously with sea salt and black pepper.
Add 1 tablespoon of plain flour to the mixture for stability.
Pick off a few thyme leaves and add them to the mixture.
Mix all the ingredients together with your hands until well combined.
Form the mixture into small tater tot shapes.
Heat sunflower oil in a saucepan to about 350°F (200°C).
Fry the tater tots in the hot oil for about 3-4 minutes until golden brown.
Transfer the fried tater tots to a plate lined with kitchen paper to drain excess oil.
While still hot, place the tater tots into a bowl.
Add a handful of parmesan cheese and drizzle with about 1 teaspoon of truffle oil.
Toss the tater tots with the parmesan and truffle oil until well coated.
