1 red bell pepper and 1 poblano pepper (combined 150g), finely diced
2 cloves garlic (6g), minced
1 teaspoon chili powder or chipotle powder (2g)
1/2 teaspoon ground cumin (1g)
1/2 teaspoon smoked paprika (1g)
1/4 teaspoon ground coriander (0.5g)
1 teaspoon salt (8g)
1/2 teaspoon black pepper (1g)
30g (1 oz) shredded Monterey Jack or queso Oaxaca
2 tablespoons tomato paste (30g)
1/4 cup chicken stock or water (60ml)
1 tbsp fajita seasoning
1/4 teaspoon chili powder or chipotle powder (0.5g)
1/4 teaspoon smoked paprika (0.5g)
1/4 teaspoon ground cumin (0.5g)
1 teaspoon garlic powder
1 teaspoon lime juice (5ml)
100g (3.5 oz) shredded cheese (Mexican)
