Open two 40 oz cans of butter beans and drain them.
Rinse the butter beans and set them aside.
Cut 10 to 12 slices of hickory smoked bacon into cubes.
Heat a bottom-heavy pot over medium-high heat and add the bacon, cooking until desired doneness.
Remove the bacon and drain off excess fat, leaving some in the pot.
Add 3 tablespoons of unsalted butter and 2 large sliced onions to the pot and soften them.
Stir in 2 tablespoons of Cajun seasoning, 2 teaspoons of black pepper, and 2 teaspoons of accent or MSG.
Add 3 teaspoons of all-purpose flour to coat the onions and cook for a few moments to remove the raw flour taste.
Add the drained and rinsed butter beans to the pot.
Pour in 4 cups of chicken broth and stir to combine, making sure to scrape the bottom of the pot.
Cover and reduce heat to low, allowing to simmer for 10 to 15 minutes until heated through.
Stir in some of the reserved bacon bits and garnish with remaining bacon bits.
