~10 g fresh cilantro, finely chopped
Juice of ½ lime
Salt to taste
2 medium zucchini, peeled if desired
2 medium yellow (summer) squash, peeled and seeded if needed
1 tbsp (15 mL) olive oil (or other fat)
30 g shredded cheese (mozzarella, cheddar, or parmesan)
Salt and spice blend
2 tbsp (~12 g) ground cumin
1 tbsp (~9 g) garlic powder
2 tsp (~6 g) onion powder
1 tsp (~6 g) salt
½ tsp (~1 g) ground coriander
1 tsp (~1 g) dried oregano
1 tsp (~3 g) turmeric
½ tsp cocoa powder (or equivalent shaved 100% cocoa)
1½ cups (270 g) Thai jasmine rice
Water (for boiling method)
Lime juice (about 1 lime)
Fresh cilantro
Salt to taste
2 lbs (900 g) grass-fed ground beef (93/7, 85/15, or mix)
1½ tsp (~9 g) salt
2½ tbsp prepared spice blend
¼ cup (60 mL) water
2 frozen shredded beef liver pucks (15 g liver per puck)
~2½ cups (360 g) frozen mango, diced
¼ cup pickled red onions
Fresh cilantro
