Finely slice some green onions, about 1 tablespoon worth.
Finely chop some carrot, about 1 tablespoon worth.
Finely chop some onion, about 1 tablespoon worth.
Crack 4 to 6 eggs into a small container and beat them well.
Add the chopped vegetables to the eggs along with 1/4 teaspoon of salt, a pinch of sugar, and a pinch of white or black pepper, and mix well.
Add 1/2 tablespoon of oil to a non-stick pan and use paper towels to spread it evenly.
Turn the heat to low and let the pan heat up.
Pour about a third of the egg mixture into the pan, tilting to spread it evenly, and let it cook for about 30 seconds until the bottom is set and the top is still a bit runny.
Using two spoons, gently roll the omelet from one side to the other.
Move the rolled omelet to the lower part of the pan and lightly coat the pan again with oil.
Add another third of the egg mixture, spread it out, and cook for about 30 seconds again.
Roll the omelet again with the spoons, even if it tears a bit, you can patch it up with more egg mixture.
Repeat the process until all the egg mixture is used up, rolling each layer as you go.
Once fully rolled, lightly sear the omelet on each side for about 30 seconds until it turns light golden brown.
Transfer the omelet to a cutting board and let it rest for about 2 minutes before slicing.
Slice the rolled omelet into bite-sized pieces and transfer to a serving plate.
