Cut the cauliflower into 1-inch thick pieces, trying to keep them together as much as possible to prevent falling apart on the grill.
Transfer the cauliflower onto a sheet pan.
In a bowl, combine 3 tablespoons of butter, 1/2 teaspoon of garlic powder, 1/2 teaspoon of smoked paprika, 1/2 teaspoon of cayenne pepper, 1/4 teaspoon of cumin, and 1/4 teaspoon of onion powder. Mix together to create a spiced butter.
Drizzle the spiced butter over the cauliflower, or use a pastry brush to coat it evenly.
Preheat the oven to 425 degrees Fahrenheit for roasting, or heat the grill to medium heat if grilling.
If roasting, place the cauliflower in the oven for 25 minutes. If grilling, place the cauliflower on the grill for about 8 minutes, flipping halfway through until tender and charred.
While the cauliflower is cooking, prepare the buffalo sauce by mixing 1/2 cup of hot sauce with 3 tablespoons of butter in a bowl.
Once the cauliflower is cooked, pour the buffalo sauce over it and toss to coat. If grilling, transfer the cauliflower to a sheet pan to soak in the sauce.
For the blue cheese sauce, combine 1/2 cup of buttermilk, 1/4 cup of sour cream, 2 tablespoons of mayonnaise, 1 teaspoon of onion powder, 2 tablespoons of dill, 2 tablespoons of chives, and 1/2 cup of crumbled blue cheese in a bowl. Mix well and season with salt and pepper to taste.
