70g Desiccated Coconut
1tbsp Maple Syrup
10 Dried Apricots
60 ml Coconut Oil (melted)
1 Lime Zest
½ tsp Vanilla extract (optional)

If using a food processor place the almond, apricot, 50 g coconut, maple syrup and coconut oil into the bowl and pulse until combined.

Grate the lime zest into the mixture, pulse again to combine.

Then transfer to a bowl to make the balls. Take about a tablespoon of mixture and roll between your palms.

When you have made all 12, place the extra coconut on a plate and roll the balls in it to coat them.

Store in the fridge can be kept for one week.

If not using a machine, chop the apricot very finely then mix all of the ingredients together, and make into balls as above.
