Frijoles Refritos

Cultural Context

Frijoles Refritos, or refried beans, have roots in Mexican cuisine, where they are a staple side dish often served with rice or tortillas. Traditionally made by frying cooked beans, they embody the resourcefulness of using simple ingredients to create hearty meals. Today, they are enjoyed globally, often featured in Tex-Mex dishes and vegetarian meals.

6 servings
Servings4
8 cups black beans
oil
pork lard
1 onion
1 tablespoon dried oregano
salt
1

Heat a skillet or pot and add enough oil or pork lard.

2

Fry 1 onion until it is translucent to add flavor to the beans.

3

Remove the onion and set aside.

4

Add 8 cups of black beans (can be red pintos or a mix) and a bit of the bean broth to a blender.

5

Add 1 tablespoon of dried oregano and blend well, using some of the bean broth to help blend.

6

Transfer the blended beans back to the skillet with the oil where the onion was fried.

7

Cook over medium heat, stirring continuously to prevent burning, until the beans thicken and liquid evaporates.

8

Once the beans have thickened and start to pull away from the sides of the pot, add more oil or lard for refrying.

9

Continue stirring until the beans are ready, which takes about an hour.

10

Add salt at the end to taste, as adding it early will concentrate the flavor and reduce the quantity.
