Heat 1 cup of water to about 122°F and add 2 1/2 teaspoons of active dry yeast; stir and let sit for about 10 minutes until foamy.
Crack 1 egg into a mixing bowl, add 1/2 cup of granulated white sugar and a pinch of salt.
In a saucepan, heat 1 cup of milk and 6 oz of unsalted butter until the butter melts; ensure the temperature is between 115-120°F.
Mix the egg, sugar, salt, milk, and melted butter together in the mixing bowl on low speed.
Gradually add 5 cups of all-purpose flour, starting with 2 cups, then 2 more cups, and finally the last cup as needed, mixing on low to medium speed for about 8-10 minutes.
Sprinkle some sunflower flour on the countertop and knead the dough for about 4-5 minutes until soft.
Wash the mixing bowl, coat it with extra virgin olive oil, and place the dough in it; cover with a towel and let rise for 1 hour.
After the dough has risen, divide it into equal portions, rolling each into a ball about the size of a golf ball and place them in a greased baking tray, leaving space between each roll.
Cover the rolls with a towel and let rise for another 30 minutes.
Preheat the oven to 425°F.
Bake the rolls for approximately 10-14 minutes until golden brown.
Brush the warm rolls with honey after removing them from the oven.
