1/4 cup apple cider vinegar
1/2 cup dark brown sugar
1/4 cup maple syrup
1/4 cup bourbon
3/4 cup brewed coffee
2 tsp garlic chili paste (sambal) or red pepper flakes
1/2 tsp ground black pepper

Chop the bacon into 1 inch pieces.

Add bacon to a cold saucepan. Turn heat to medium-high and cook until crispy.

Chop both onions to a medium dice.

Using a strainer, remove the bacon from the pan onto a paper towel-lined plate.

Empty the rendered bacon fat from the pan, except for two tablespoons. Discard the rest or save for another use.

Add the onions to the pan and cook on medium heat until they’re translucent (about 5-10 minutes). Stir occasionally.

Add garlic and cook for about 1 minute. Do not burn the garlic!

Add the bacon back into the saucepan.

Add in coffee, bourbon, maple syrup, sherry vinegar, apple cider vinegar, brown sugar, garlic chili paste (sambal), and ground black pepper. Stir to combine.

Bring to a boil, then reduce heat to low.

Simmer on low heat for 45 minutes, or until thickened. Stir occasionally.

Once thickened, scoop the finished jam into the bowl of a food processor.

Pulse 5-10 times to get as smooth as you wish, depending on how chunky you want it.

Store in a glass jar with a tight fitting lid. It must be kept refrigerated, and will last about 2-4 weeks.
