Orzo with Mushrooms

3 cloves garlic
1 small to medium onion
1 cup orzo pasta
3 cups low-sodium chicken broth
1 cup frozen peas
2 tablespoons butter
shredded parmesan cheese
Fox Point seasoning

Mince 3 cloves of garlic using a knife.

Wash and cut mushrooms, either in halves or slices.

Dice a small to medium onion.

Heat a saute pan over medium heat and add olive oil.

Add diced onions and mushrooms to the pan and saute until softened.

Add minced garlic and saute for 1 minute to avoid burning.

Add 1 cup of orzo pasta to the pan and saute until it becomes slightly nutty.

Pour in 3 cups of low-sodium chicken broth and bring to a light boil, then reduce to a small rolling boil.

Cook until the orzo absorbs the liquid and becomes al dente.

Add 1 cup of frozen peas to the pan and stir; they will cook from the residual heat.

Add 2 tablespoons of butter and let it melt into the mixture.

Season with Fox Point seasoning, fresh cracked black pepper, and a little salt, being cautious due to the chicken broth.

Stir in shredded parmesan cheese, reserving some for serving if desired.

Plate the dish and serve, optionally garnishing with more parmesan.
