Orzo with Mushrooms

1 cup Orzo Pasta
2 cups Chicken or Vegetable Broth
2 tbsp Extra Virgin Olive Oil
1 Onion, finely chopped
2 Cloves Garlic, minced
8 oz Mushrooms (such as cremini or shiitake), sliced
1/4 cup White Wine, optional
1/4 cup Parmesan Cheese, freshly grated
Salt and Pepper, to taste
Fresh Chopped Parsley, optional, for garnish

Saute the chopped onion and minced garlic in olive oil until softened.

Add the sliced mushrooms and cook until they are tender.

Stir in the orzo pasta and cook for a minute.

Pour in the broth and bring to a boil.

Reduce heat and simmer until the orzo is cooked and has absorbed most of the liquid.

If using, add white wine and stir in the grated Parmesan cheese.

Season with salt and pepper to taste and garnish with fresh parsley before serving.
