Rinse the kale and discard the leaves after washing.
Remove the stems from the kale and chop it into pieces.
Prepare 1/4 cup of toasted pine nuts by placing them on a baking sheet and toasting them in the oven until golden brown.
Measure out 1/4 cup of crumbled feta cheese and set aside.
Thinly slice 1/4 cup of red onion and set aside.
Prepare 4 blood oranges by cutting off the top and bottom, then slicing around to remove the peel, and cut into round slices.
In a jar, combine 2 tablespoons of olive oil, 1 tablespoon of red wine vinegar, 1 tablespoon of fresh blood orange juice, 1 teaspoon of honey, 1/2 teaspoon of Dijon mustard, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Shake well to mix the dressing.
In a large bowl, add the chopped kale and half of the dressing, then massage the kale with the dressing and the sliced red onion to soften it.
Plate the dressed kale on a large platter, adding the toasted pine nuts, crumbled feta, and blood orange slices on top.
Drizzle the remaining dressing over the salad before serving.
