Prepare 6 chicken breasts by placing them in a zip-top bag and using a flat mallet to pound them to about a quarter inch thickness.

Set the pounded chicken aside on a plate after flattening all pieces.

In a pan, sweat the chopped shallot until translucent.

Add 1/2 cup of white wine to the pan and cook for 3-5 minutes to cook out the alcohol, ensuring a steady bubble.

Add 1 teaspoon of minced garlic, a little salt, and pepper to the pan with the wine and shallots.

To thicken the sauce, mix 1 teaspoon of cornstarch with cold water in a container, shake well, and add to the warm liquid in the pan if desired.

After cooking the wine, add approximately 1/2 cup of chicken broth to the pan.

Taste the sauce and adjust seasoning with more salt, pepper, or onion powder as needed.

Squeeze in the juice of about half a lemon, adjusting to taste based on the acidity of the wine used.
