Easy Vegan Vanilla Cashew Yoghurt (Dairy Free!)

Combine 1 cup of cashews, 1/2 cup of water, 2 1/2 tablespoons of lemon juice, 2 tablespoons of maple syrup, 4 teaspoons of vanilla powder, and two large pinches of sea salt in a blender.

Blend the mixture until smooth.

(Optional) Add probiotic powder and leave to ferment at room temperature for 24 hours or longer.

To assemble the berry parfait, start with a layer of mixed berries at the bottom of a serving dish.

Add a dollop of the vanilla cashew yogurt on top of the berries.

Sprinkle 2 tablespoons of dried coconut on top of the yogurt.

Add 1 tablespoon of hemp seeds on top of the coconut.

Add 1 tablespoon of pumpkin seeds on top of the hemp seeds.

Finish with some refreshing lime or lemon zest on top.
