Preheat the oven to 450°F (232°C).
Line a baking sheet with parchment paper.
Combine Italian seasoning, minced dried onions, garlic powder, and cajun seasoning in a bowl and set aside.
Cut each red potato into quarters (wedges).
Pour the oil and seasoning mixture over the red potatoes and coat well.
Place the wedges skin side down on the baking sheet, ensuring they are not touching each other.
Bake for 25-30 minutes.
Tip: If you bake the wedges skin side down, you don't have to turn them; they get crispy on both cut sides.
Sprinkle the hot potato wedges with pink salt.
Serve with dipping sauce of your choice.
