Drain the liquid from 2 cans of sardines in olive oil into a fine sieve over a bowl.
Gently shake the sieve to remove excess oil from the sardines.
Heat a fry pan over medium heat and add 3 tbsp of reserved olive oil.
Finely chop 1 small onion to yield 1/3 cup and roughly chop 4 cloves of garlic.
Add the chopped onion and garlic to the hot fry pan and sauté for 3-4 minutes until the onion is translucent and garlic is fragrant.
Add 1 tsp of hot smoked Spanish paprika and 1/2 tsp of sweet smoked Spanish paprika to the pan and mix well.
Pour in 1/2 cup of dry white wine and simmer for 2-3 minutes to cook off the alcohol.
Add a 15 oz can of tomato sauce and 2 tbsp of chopped fresh parsley to the pan, seasoning with sea salt and black pepper.
Gently add the sardines to the pan, ensuring they are in a single layer and evenly spaced.
Lower the heat to low medium and simmer for 5-10 minutes to develop flavors.
Remove from heat and transfer some sauce to a serving dish, topping with sardines and garnishing with lemon and parsley.
