Tamales de Cochinita Pibil

2 cups masa harina
1/2 cup lard or vegetable shortening
1 tsp baking powder
1/2 tsp salt
1 cup chicken broth
1 lb pork shoulder, cooked and shredded
1/2 cup achiote paste
1/4 cup orange juice
1/4 cup lime juice
banana leaves, for wrapping

In a large bowl, mix the masa harina, baking powder, and salt together.

In a separate bowl, beat the lard or shortening until fluffy, then gradually add the masa mixture and chicken broth until a soft dough forms.

In another bowl, combine the shredded pork with achiote paste, orange juice, and lime juice until well coated.

Cut banana leaves into squares and soften them by briefly heating over an open flame or in hot water.

Take a piece of banana leaf, spread a portion of masa dough in the center, add a spoonful of the pork mixture, and fold the leaf to enclose the filling.

Repeat the process until all the masa and filling are used up.

Place the tamales upright in a steamer pot, cover with additional banana leaves or a damp cloth, and steam for about 1.5 to 2 hours until the masa is firm.

Check the water level in the steamer occasionally and add more water if necessary.

Once cooked, let the tamales rest for a few minutes before serving.
