Ground oats are healthier and gluten-free.
Start with the breadcrumb mixture: combine 1 1/2 cups fresh breadcrumbs with the crusts, 1/4 cup chopped parsley, and 2 tablespoons of dried herbs (oregano, thyme, or Italian seasoning).
Add 1/4 cup grated Parmesan cheese and 1/4 cup grated Pecorino cheese to the breadcrumb mixture.
Season the mixture with 1 teaspoon of salt and 1/2 teaspoon of black pepper.
Spread the breadcrumb mixture evenly in two dishes or a 9x13 Pyrex dish.
In a mixing bowl, combine 2/3 cup of olive oil, 1 teaspoon of lemon zest, 1/4 cup of fresh lemon juice, and 2 cloves of minced garlic.
Mix the wet ingredients and pour them over the breadcrumb mixture in the dishes.
Cover the dishes with parchment paper to prevent aluminum foil from touching the acidic mixture.
Bake at 325°F for 20 minutes, then increase the temperature to 375°F and bake until golden brown.
Remove from the oven and let cool slightly before serving.
