Add 4 tablespoons of melted butter and 1 egg to the mixture and mix until homogenous.
Add 3 1/2 cups of flour and 1 teaspoon of salt to the mixture and stir with a small spatula until it forms a craggly blob.
Turn the dough out onto a floured surface and knead by folding and pressing until smooth.
Place the dough in a bowl coated with oil, cover tightly, and let it rise for about 45 minutes until doubled in size.
Once the garlic is roasted, let it cool and squeeze the cloves out into a bowl.
Cut 12 pieces of string cheese into thirds.
Punch down the risen dough and divide it into 12 equal pieces.
Flatten each piece, add 1 piece of string cheese and 2 cloves of garlic, then roll it up and pinch to seal.
Place the rolls in a greased cast iron pan, minimizing handling to keep them airy.
Let the rolls rise again for about 1 hour until they are big and poofy.
Bake the rolls until golden brown.
Melt 1/2 cup of butter and add 2 cloves of garlic, removing the skins and mincing them.
Add chopped fresh parsley to the melted garlic butter.
Spoon the garlic butter over the baked rolls, focusing on the edges.
