Knead the dough in the bowl for 1 to 2 minutes to develop gluten.
Shape the dough into a ball, sprinkle flour on a clean surface, and cut the dough into three evenly sized pieces.
Shape each piece into a ball and cut each into 8 evenly sized pieces, totaling 24 pieces of dough.
Stuff each piece of dough with a square of Manchego cheese, ensuring the dough is well sealed around the cheese.
Line an 8-inch baking pan with parchment paper and tightly pack the stuffed dough pieces into the pan.
In a bowl, combine 1 tablespoon of extra virgin olive oil, 4 minced garlic cloves, and 1/2 tablespoon of dried oregano. Mix well.
Brush the garlic oil mixture evenly over the pieces of dough in the pan.
Bake in the preheated oven for 15 minutes.
Remove the bread from the oven and sprinkle 2 cups of shredded cheese on top.
Return the bread to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Transfer the bread to a serving dish and sprinkle with freshly chopped parsley.
