This rustic bread symbolizes community and sustenance, often enjoyed with local ingredients like tomatoes or olives. Today, it’s a staple in Maltese households and has gained popularity in Mediterranean cuisine worldwide.

Prepare a container with a good cover for the dough.
Add 22 grams of regular table salt to the container.
Add 7 grams of yeast to the container.
Pour in 800 mils of regular tap water.
Add 800 grams of plain flour to the mixture.
Mix the ingredients together using a stand mixer for 20 minutes until elastic.
Scrape the dough into a container and cover it.
Let the dough rise for 45 minutes.
After 45 minutes, stretch the dough from underneath on all four sides and fold it over itself.
Cover the dough again and let it rise for another 45 minutes.
Repeat the stretching process for a total of four times, letting it rise each time for 45 minutes.
Preheat the oven to 250 degrees Celsius with a tray of water inside.
After the final rise, prepare the dough for baking.
